Healthified Peanut Butter Rice Krispy Treats
One of the best snacks as a kid was a rice krispy treat, though maybe not the best for you…I would always hope to find one in my lunch bag in grade school! I made a simple and healthier version of these with peanut butter making them all the better. Here’s what you’ll need to make them:
3/4 cup Peanut Butter
3 tbsp Coconut Oil
1/4 cup Date syrup @dvashorganics or maple syrup
2 cups Brown Rice Cereal @sprouts
Mix all wet ingredients in a pan over the stove on low heat until it’s all well-mixed. Then add in the cereal and stir continuously until it’s folded into the mixture. Remove from the stove and pour into a lined baking dish(I used an 8x8 pan Pyrex dish). Place in freezer for 20 minutes, removed and cut into squares. Heat up chocolate chips in the microwave at 30 sec increments stirring in between until melted~drizzle on top. Let sit for 5 then enjoy!
Super easy with minimal ingredients making them perfect for a last minute dessert or snack! These didn’t last too long at my place because they were just too good not to eat!
