Coconut Flour Fat Bomb Cookies
I originally thought these cookies were a complete fail, but they ended up being one of my favorite healthy snack cookies! These are full of all the healthy fats and are gluten + dairy free +low in sugar! These are a great snack to keep around that will also help satisfy your sweet tooth. What you need to do:
3/4 cup Coconut flour
3/4 cup Almond butter
1 Egg
2 tbsp Almond milk
1/3 cup Coconut oil
2 tbsp Maple syrup
Chocolate chips
Mix all ingredients together(if dry add more milk, if too wet add more flour). Take a spoon and create balls of dough-place on a baking sheet with parchment paper and bake at 350 for 15-18 minutes. Check to make sure they’re more firm. Let them cool before enjoying and storing.
I would move these to the fridge after 4-5 days(if they last that long) in order to help keep them fresh.
