Roasted Sweet Potatoes
Sweet potatoes are a great complex carb to have prepped for your busy week. Not only do they help provide our bodies with energy, but also fiber and vitamin A! When cooking your taters you can choose between sweet or savory-even both if you really wanted-making them a very versatile food.
Preheat your oven to 415 and slice your taters either long ways in fry shape or short ways in circle shape. If choosing to make them sweeter I like to roast with coconut oil and season with cinnamon. If I’m going savory I’ll roast with olive or avocado oil and season with garlic salt and/or paprika. Cook for 20-25 minutes or until crispy and soft. These can go with any meal. For the sweeter potatoes I like them with yogurt and oatmeal bowls and for the savory I like them in lunch bowls with pesto and avocado. Enjoy!
