Gluten Free Chocolate Walnut Mini Banana Bread

Who doesn’t love a miniature version of foods?! I’m always looking for new ways to make banana bread, so of course I had to try mini loaves with chocolate. This chocolate used also contains collagen so these bbs are full of healthy benefits! Here’s what you need:


3 ripe bananas
2 eggs
1-2 tbsp maple syrup
1/4 cup almond milk @califiafarms
1 tsp vanilla extract @nielsenmassey
1 tsp baking soda
2 scoops @furtherfood chocolate collagen
1 1/2 cups gluten free flour @traderjoes
Cinnamon
Chocolate chunks @traderjoes
Walnuts
Mash bananas then add in eggs and stir. Add in all wet ingredients followed by dry-mix well~line a mini bread loaf pan with coconut oil and pour batter in, bake at 350 for 22-25 minutes(check at the 23 mark with a toothpick) let cool with a towel on top. Enjoy!

I love reheating mine up for 30 seconds in the microwave and topping with peanut butter for a fun breakfast treat. Don’t have chocolate collagen? Just use 2 tbsp cacao powder!
