Paleo Bowl
This is one of my favorite go-to dinners~it’s great when you’re feeding two or when you want leftovers for lunch the next day! Here’s what you need:
1 Sweet Potato
1 Zucchini
1/2 cup Baby Carrots
1/2-1 bag Brussel Sprouts Shavings
1 Avocado
Lean Ground Chicken
1 Packaged Salad-I like the Southwest Salad package from Trader Joe’s
Cut your potato into fry shapes and roast at 415 for 20-25 minutes with avocado oil and garlic salt. While those cook get your chicken cooking in a pan with oil and season how you like(I use Everyday seasoning from TJ’s). Steam your other chopped veggies in a pot for 5 minutes then sautee for 5-7 minutes in a pan. Pour your salad in to dishes and top with cooked veggies, chicken, and avocado. Use a light amount of dressing if desired. Enjoy!
*You don’t have to use a package salad I just think they’re nice to have on hand-feel free to use any lettuce you desire.
