Simple Green Salad

My go-to lunch is some sort of salad that I can throw together with simple ingredients I already have prepped. I always try to make sure i have a protein, healthy fat, and some complex carbs so I feel satisfied and ready to keep going! Here’s an easy salad that’s also budget friendly~

Romaine Lettuce

1 Chicken Sausage

Brussel Sprouts

Broccoli

Cherry Tomatoes

1-2 tbsp Hummus

Olive oil

Nutritional yeast

I’ll wash and chop my romaine lettuce-sometimes I’ll just chop it all so I have lettuce prepped for the rest of my week, but if you want to do that chop 3-5 lettuce pieces. Next chop your chicken sausage and cook with olive oil in a pan over the stove. If you don’t already have brussel sprouts and broccoli prepped then go ahead and chop them and roast with avocado or olive oil at 415 for 20-25 minutes with garlic salt and black pepper. Wash and chop your tomato cherries while everything is cooking. When all food is ready to go you can throw it all in your favorite bowl and top with 1-2 tbsp of hummus, a drizzle of olive oil, and a dash of nutritional yeast for some extra protein and flavor! Enjoy!
