Chocolate Chip Pumpkin Muffins

Need a quick breakfast or snack that you can grab while running out the door? These muffins are the perfect choice for when you’re still trying to incorporate healthier foods in your diet with that busy schedule! Here’s what you need~

1 1/2 cups coconut flour

2 eggs

1/2 can pumpkin

1/8 tsp cinnamon, nutmeg, and ginger spices

1 tsp vanilla extract

1/2 tsp baking soda and baking powder

1/4 cup maple syrup

2 tbsp coconut oil

1 cup almond milk

Chocolate chips

Mix all wet ingredients together in a bowl-add in dry ingredients and mix well. Line or oil muffin tins-makes about 15 total. Pour batter in each compartment so it fills the tin and bake at 350 for 40 minutes or until golden on top. Enjoy for breakfast, snack, with a yogurt bowl, or even dessert!

*May substitute with almond flour
