Quick Sweet Potato Egg Breakfast

An easy meal that has all the macronutrients our bodies need and is budget friendly!

All you need~

1 Sweet potato

2 Eggs

Spinach

1/2 Avocado

Everything but the bagel seasoning-or just salt and pepper

Wash your potato and cut little slits throughout the outside. Microwave on a plate for about 4 minutes each side-if your potato is smaller try 3. Scramble up your eggs with spinach-I typically cook with olive oil. Once the potato looks and feels cooked slice in half down the middle and toss your eggs on top-like a baked potato. Add the avocado and seasonings and enjoy!

The sweet potato offers complex carbs which have more fiber to keep us satisfied throughout our day. We’re getting protein from the eggs, and healthy fats from the avocado.
