Chicken Sausage Taco Lunch Plate

My favorite meal may be lunch because it’s the time I feel I can get the most creative and just throw a bunch of random foods together to call it a meal. My lunches typically include some sort of salad with chicken and veggies, but this bowl may end up being a new favorite…not only is it easy, but also quick and nutritious! What you need:

1 Chicken sausage(I typically get mine from Trader Joe’s or Costco)

1 Grain free tortilla(I use Mikey’s which I get at Sprouts)

1 cup Frozen veggies

1-2 tbsp Pesto(I use TJ’s vegan kale pesto)

First cut your sausage up-I typically cut lengthwise for circles. Next you’ll sauté your sausage and veggies together-feel free to season with garlic salt and oregano. Once cooked I’ll heat up my tortilla for 12 seconds in the microwave. Throw all the goods in a dish and top with some pesto then you’re good to go! Yep that easy! Keeping frozen veggies around is a lifesaver for quick meals like this. Happy Eating!
