Coconut Oreo Bites

Oreos were one of my favorite cookies growing up and when you have a sweet tooth like mine it's hard to stay away! From recent posts you can see that I am a huge fan of nut butter bites for a nutritious and energizing snack. This time I experimented with coconut butter(still a nut butter coming from the tree nut family) and created coconut oreo bites.

Recipe
1 cup coconut butter
1/4 cup flax meal
1/4 cup coconut flakes
2 tbsp chia seeds
1 1/2 tbsp cocoa powder
1 tbsp honey(can add more to sweeten)
1/2 cup dark chocolate chips(can add more to sweeten)

Mix all the ingredients in a bowl until well stirred. Place in refrigerator for about 15 minutes. Make into little snack balls. Sprinkle leftover coconut flakes on top and store in an airtight container on the counter. If you store in the fridge they will become hard and hurt your teeth (I did this). Enjoy the nutritious version of your favorite childhood cookie!

Yes, these little guys are high in fat, but fat is not something to be afraid of-especially the healthy kind. Coconut actually helps boost your metabolism and your immune system! The MCTs (medium-chain triglycerides) found in coconut are burned by the body for energy thus boosting our metabolism. A type of MCT found in coconut is lauric acid which aids in treating viruses and infections. Not to mention coconut also contains a fair amount of fiber! Trust the coconut!
