Vegan + Gluten Free Peanut Butter Banana Muffins

Muffins are one of my favorite breakfast items & snacks to have on hand. These specific muffins include my favorite food combo…peanut butter and banana! Even better, they’re gluten and dairy free plus free of eggs.

What you need:

2 ripe bananas
1/3 cup peanut butter
2 tbsp @dvashorganics date syrup
3 tbsp almond milk
2 Flax Eggs
1 1/2 cups oat flour
1 tsp baking soda
1 tsp vanilla
Cinnamon
Chocolate chunks @traderjoeslist

Mash bananas and stir in wet ingredients + flax eggs~mix in the dry until a batter forms-line a muffin pan with coconut oil and bake at 350 for 12-14 minutes
Enjoy!!

Oat flour can be made by blending 2 cups of rolled oats!
Flax eggs: 2 tbsp flax meal + 6 tbsp water, let sit for 10-15 minutes
