Gluten and Dairy Free Pumpkin Pancakes

My favorite season is the Fall, so of course some pumpkin pancakes are needed for this cozy time. These are fun and easy to make on a slow morning when you’re wanting something that screams Fall! Feel free to adjust the toppings used to your liking, this is just how I like to top my pancakes. What you need:

1 Ripe banana

2 Eggs

1/3 cup Canned pumpkin

1/2 cup Oats

1 tbsp Flax Meal

Few dashes of Cinnamon & Pumpkin Spice

Mix all ingredients together to form a batter and cook over medium over the stove with coconut oil-let the first batch sit for about 5 min before flipping(these may be a little flimsy at first).
Top with maple syrup, granola, and peanut butter~Eat up!
