Copycat Nestle Tollhouse Grain Free Cookies

This is probably one of my favorite recipes I’ve made! These cookies are not only grain, gluten, and dairy free but also low in sugar and super simple to make. They remind me of the cookies you make on the back of the Nestle Tollhouse chocolate chips bag-hence the name! Here’s what you need—

1 cup cassava flour
1/2 cup cashew butter
2 eggs
1-2 tbsp maple syrup
1 tsp vanilla
1/4 cup coconut oil
1/2 tsp baking soda
1/2 tsp baking powder
Chocolate chips—I never measure I kinda just go for it haha

Mix all the wet ingredients first then add in the dry and whisk it all together. Add in the chocolate chips and use a spatula or spoon to stir~line a baking sheet with parchment paper and bake at 350 for 10-12 minutes-I took mine out at 11. Let cool then enjoy!

These are great to keep around to help satisfy that sweet tooth and because their sugar content is low you could even eat them as a breakfast cookie(clearly I’ve done this)!

For dairy free chocolate chips I use Enjoylife Foods.

Store in a container on the counter. Happy Eating!
