Healthy Simple Chicken Dinner
I’m always looking for something quick, satisfying, and nutritious! I received a meal prep package very similar to this recipe and decided to recreate to make it more budget friendly! Here’s a twist on a slightly gourmet meal—
1-2 Chicken breasts
4-6 Red or White potatoes
3-7 Carrot sticks
1/2-1 Avocado
Salt
Pepper
Garlic/Onion powder
Paprika
Olive oil
Chop potatoes and carrots-season carrots with olive oil, salt, and pepper & taters with garlic salt, paprika, and olive oil. Take the chicken breast(s) and pat dry with a paper towel-season it with olive oil and Everyday seasoning from @traderjoes . Bake the chicken and carrots together on one baking sheet with parchment paper and put the potatoes on their own sheet-bake at 425 for about 25 minutes~check to make sure the chicken is done by cutting in the middle~top with avocado and enjoy!
This has become one of my favorite go-to’s and I love how I can make it a two person meal when needed. Happy Eating!
