Three Ingredient Pancakes

Who doesn't want pancakes for breakfast?! You may be out of the boxed mix, but here's an easy 3 ingredient recipe that is more nutritious than your boxed cakes!

Recipe:

1 ripe Banana

2 Eggs

2 tbsp Flax Meal

Optional: Cinnamon

Mash banana in a bowl then whisk in the eggs and flax meal. Cook on an oil based pan on the stove top at medium heat. Use a ladle to place small-medium sized circles on pan, flip after about a minute. The smaller the pancake the easier to flip. Flax meal helps with the thickness of the batter and offers protein, fiber, and healthy fats.

I topped mine with peanut butter and granola, but feel free to use any nut butter, maple syrup, honey, berries, or anything you like! This makes one serving, but can be doubled to feed two.
