Vegan Gluten Free Oat Muffins

To be honest I forgot to add in the vegan flax eggs I had prepared for the recipe(baking with wine can do that to you), but they still came out great! These little guys are made with oat flour which you can easily make at home-blend up rolled oats. Here’s what you’ll need for the recipe:

1 1/2 cups oat flour
2 ripe bananas
1/3 cup almond butter
2 tbsp @dvashorganics date syrup
1 tsp @nielsenmassey vanilla
3 tbsp almond milk
1 tsp baking soda
Cinnamon
Chocolate chips
Mash the bananas and mix in ingredients to form batter. Line a muffin tin with coconut oil and fill the cups about half way~bake at 350 for 13-15 minutes. Let them cool and enjoy!
Simple, delicious, and nutritious.

I’ve eating these for a quick breakfast on the go and love to dip them in peanut butter.
