Sweet Potato Breakfast Nachos
This one’s for the homies with the sweet tooth! One of my favorite breakfasts on a lazy Saturday morning because who wouldn't want nachos?!
1 big sweet potato or a few of the mini potatoes
Nut butter
Granola
Coconut flakes
Chia seeds
Cinnamon
Cut the sweet potato into rings and spread on a baking sheet with coconut oil and sprinkled cinnamon. Roast at 350 for 20-25 minutes. Move to a plate and top with your choice of any nut butter(I used almond butter), granola, chia seeds, and coconut flakes. Perfect for sharing!
