Spaghetti Squash

A budget friendly meal with a range of health benefits, the spaghetti squash! This chihuahua sized vegetable is full of fiber, B vitamins, and vitamin A and C. It even looks like angel hair pasta and tastes delicious.

Before cutting this thing in half you are going to want to microwave it for about 5 minutes with air slits cut throughout. Once it’s a little softer carefully cut in half and roast in the oven for 20-25 minutes at 400. It will be nice and toasty once removed so let it cool before scraping those seeds out-very similar to a pumpkin. After the seeds are removed use a fork and scrape at the squash so the insides come out and make a pasta like appearance.

Spaghetti squash can be topped many different ways, but for an easier recipe I just used marinara sauce and lean ground chicken. The chicken was easily cooked on the stovetop with Everyday seasoning from Trader Joe’s

Once completed go ahead and serve yourself a half portion and top as you like!

1 Spaghetti Squash

1 package Lean Ground Chicken

1/2-3/4 cup Marinara Sauce

This is good with pesto and salmon as well!
