Microwave Nut Butter Sweet Potato

I try not to use the microwave as much, but sometimes its necessary for those busy days! This is one of my favorite meals with ingredients that are easy to keep around-especially on a budget. Here’s what you need:

1 Sweet Potato

1-2 tbsp Nut Butter

Cinnamon

Optional: Hemp seeds, Granola, Coconut Flakes

First you’ll wash your potato, then cut little air slits throughout the body. Place it on a plate and microwave for 4-5 minutes on each side. If your potato is smaller take the time down 30 seconds to a minute. Once done let it cool-the plate will be very hot! Cut down the middle of the tater-should be nice and soft. Slather with your favorite nut butter and sprinkle some cinnamon on top~just like that you have a delicious complex carb, protein, and healthy fat based meal! I love this for any meal and if you’re looking to go savory top with avocado and beans or a meat protein. Enjoy!
