Pesto Chicken Pasta

This is a great meal for the whole family or even to prep for yourself to have leftovers throughout the week! i’m personally gluten free so I use an gluten free pasta, but you can use any whole wheat pasta as well. If you’re dairy free you’ll want to use Trader Joe’s vegan pesto as opposed to regular which typically has a little cheese in it.

1-3 Chicken Breasts

1 Package of Pasta

1/2-1 Jar of Pesto

1 Zucchini

1 Slice of Bread (optional for garlic bread)

You’ll let the chicken and pesto sit in the crockpot for 4-5 hours. When it’s getting closer to the time you want to eat start boiling water for your pasta. To get a veggie in you’ll cut the zucchini to get circles and saute over the stove with olive oil, oregano, and garlic. Once your pasta is done you’ll strain it and dish it up with the chicken and zucchini. Option to bake bread with butter and garlic salt-about 5-7 minutes
