Baked Salmon Dinner
Salmon is one of my favorite proteins to eat and all-time favorite fish. I’m all about an easy and simple recipe, so I thought I’d share how to make a fancy looking meal that’s actually quite simple! Here’s what you’ll need:
Salmon-wild caught is best
Broccoli
Japanese Sweet Potato
Vegan Kale Pesto-from Trader Joe’s
Seasonings: Lemon, Sea Salt, Olive/Avocado oil, Garlic Powder, Pepper
Bake salmon at 410 for 15 minutes, then broil for another 3-5 min-topped with olive oil, lemon juice, and sea salt. Roast veggies at same temp for 22-25 minutes with sea salt, garlic, and pepper + avocado oil.
Plate it and add some pesto or avocado. Eat up!
This is a great meal to make double so you may have leftovers for the next day. When purchasing salmon try to stray from Farm Raised and go for the WIld Caught.
