Sweet Potato Toast

Why not have another way to use the sweet potato?! These are the most versatile veggie and my all time favorite. Want a new way to eat toast? Try sweet potato toast! Here’s what to so~

1 Sweet Potato

Coconut oil

Toppings of choice:

ex. nut butter, avocado, butter, granola, berries, eggs, pesto, tomato, etc.

Cut sweet potato in half and then into 1/4 slices to make a toast like shape-be cautious while cutting. Place on a baking sheet with parchment paper and spray with coconut oil. Roast at 400 for about 20 minutes. Top with some of your favorite toppings~I chose almond butter with cinnamon and avocado with Everything but the bagel seasoning. Enjoy a new way to toast!
