Gluten Free Oatmeal Blueberry Muffins

I’m always looking for something easy to grab in the mornings and there is really nothing better than a cozy muffin! These little guys are free of gluten and dairy + low in added sugars. They’re super easy to whip up and so tasty. Here’s what you need:

1 cup Oat Flour
1/2 cup Rolled oats
2 Eggs
1/4 cup Apple sauce
1/4 cup Maple syrup
1 tsp Vanilla extract
1 tsp Baking soda
Handful Blueberries

Mix wet ingredients together first, then mix in the dry to form a batter. Spray muffin tin with coconut oil and pour-made about 8! Bake at 350 for 15-18 minutes-check the middle with a toothpick to be sure.
Let cool, then enjoy!

Store in the fridge after a few days in order to keep them nice and fresh. I liked heating mine up and topping with almond butter.
